Saffron Yellow Cauliflower “Rice” – Low Carb & Gluten Free

 

 

 

I love cauliflower rice as a substitute for carb-y regular rice and so do my blood sugars.  I wanted a true side dish that would be delish even without a sauce on top, though it should be versatile and seasoned simply enough that it wouldn’t fight with a sauce.  Hubs came up with this version and it is my new fave cauliflower rice.

While it is yummy enough to eat by itself, we also love this cauli rice with our Garlic Lime Cheddar Chicken (Recipe Coming Soon) & Homemade Salsa on top (check out our site search bar for our Homemade Salsa recipe).  I go crazy for that meal and feel healthier when I eat it.  Though it seems like a comfort food meal, it is mainly just protein and veggies.  Baked chicken and fresh veggies never tasted so good!  Did I mention this cauliflower rice is quite easy to make?  Simple and delicious, we make this one a lot.

 

 

Notes: This recipe makes a lot of servings but stays nicely in the fridge and is wonderful reheated over several days.  One simple way to make it into a quick meal is to try it with some salsa and Queso Fresco cheese crumbled on top for a yummy Mexi-style entrée.

Saffron Yellow Cauliflower “Rice” – Low Carb & Gluten Free

Ingredients

  • 2 tbsp olive oil
  • 2 medium heads of cauliflower florets – washed and riced
  • 4 oz can mild green chiles, diced
  • 2 packets Sodium Free Herb Ox Granulated Chicken Bouillon
  • 1 good pinch of saffron, crumbled
  • 5 tbsp butter
  • 1 tsp sea salt
  • ½ tsp ground black pepper

Instructions

  1. Place olive oil in large skillet and heat over medium – high heat.
  2. Add riced cauliflower and all ingredients and saute for 10 – 15 minutes, stirring frequently. Serve! Posted by ToTemptation.com on March 30, 2018
