Slow Cooker Salsa Verde Chicken – Keto, Low Carb, Gluten Free

What on earth could be better than slow cooker season? How about this dinner that is low in carbs & free from gluten? 

I love Mexican food so when my husband decided to go with a slow cooker salsa verde chicken that could double as low-carb tacos (on romaine lettuce cups), or over cauliflower rice for a warm, comforting meal I was on board.

We served ours over our Saffron Cauliflower Yellow Rice http://totemptation.com/saffron-yellow-cauliflower-rice-low-carb-gluten-free/the first night and had the taco option the next night which happened to be a weeknight after a long day at work. It totally hit the spot.

We liked it with a squeeze of fresh lime juice, a dollop of sour cream and some Chihuahua cheese sprinkled on top.  It was a delicious and easy dinner that didn’t wreck my blood sugars!

Slow Cooker Salsa Verde Chicken – Keto, Low Carb, Gluten Free

Ingredients

  • 2 ½ lbs chicken breasts (boneless, skinless)
  • 1 tsp Adobo all-purpose seasoning (this is a nice salty seasoning so you don’t need additional salt in this recipe)
  • ¼ tsp cumin
  • ½ tsp garlic powder
  • ¼ tsp ground white pepper
  • ¼ tsp ground black pepper
  • ¼ tsp thyme
  • 2c. salsa verde

Instructions

  1. Put everything into your slow cooker (in the order of the ingredients above) and cook on high for 4 hours. Enjoy!
